A canopy will probably nor fair well at road speeds, remove canopy and anything loose from cockpit, place all loose stuff in the cabin including fenders, drain water tanks too.
I used to leave mine up, mind I was only going 3-4 miles to launch. Remove the trailer board I would say. Wouldn't want it under water also when I had my trailer it would have got in the way of the boat keel.
Canopy off when on the road. They are not designed to stay up at 50 mph!! Even more from buffeting trucks.
Lighting board very certainly off when launching. Note - when buying a light board, ensure the cable is long enough to go all the way to the back of the boat. Most won't.
