I've linked two 125amh batteries together. can I use the two oppersite terminals to connect the solar panels to or do these have to be connected to the terminals I'm taking the load from?

Assuming you have linked the two batteries in parallel, you can connect your panel to any +ve and -ve terminal.

If they are in series, you may just have created a problem!!!! But at least the lights will be bright for a while!!!!!!
