Just in case anyone is interested, found a cheap and easy way of adding some extra "galley" work surface area.
An old kitchen cupboard door cut to size and a couple of spring loaded shelf brackets.
Easily folds out of the way without compromising on the sleeping length of the V berth, but decent size area for meal prep etc.

The brackets themselves keep the surface supported, I've sat on it like that and it was OK.
Would still pay to be mindful of idiots speeding around though in case of "bounce".

What keeps it up with a plate of your dinner on it? Do you have a swing out support behind it we cannot see?

I'm very protective of my dinner ever since my wife did a lovely meal, put the plate and knife & fork on the coach roof and some utter tosser went storming past, his wash lifting us up in the air violently and over the side went plate, knife, fork and dinner.

It is people like that who caused the word euthanasia to be invented!
