More Welly is nice, but probably not the answer to your problems.....

Sounds like a blocked idler jet (A common outboard problem)no fuel on shut throttle so motor stops.

Based on your restoration I'm sure you can either remove the carb & clean out the jets or know someone who can help.

Be careful leaning over the back to remove the carb as its easy to drop something overboard
